Tomato & Basil Spaghetti with Burrata



Simple is best! When it comes to working with fresh, high-quality ingredients simple is definitely best.


This dish is not only easy to recreate but packs a punch of flavour. 4 ingredients is all you need to consider yourself a pasta MasterChef.


First off ensure your using a fresh pasta. A high-quality fresh pasta will give you the silky texture full of flavour and is the hero of your dish.


Secondly the sauce! if you are not using our homemade tomato and basil sugo, make sure you are substituting with a high quality sugo made on Italian whole peeled tomatoes, or better yet making your own.


Lastly burrata! burrata! burrata! there just is no substitute for the creamy, decadence that is burrata.


In 20 minutes, you'll have a masterpiece worthy of any dinner party, or a wholesome family dinner.

Team this one up with some homemade garlic bread for a crowd pleaser.







PREP TIME 5MINS | COOKING TIME 20MINS SERVES 4


INGREDIENTS:

  • 400g Fresh Spaghetti (any long shape works well)

  • 5 tablespoons olive oil, plus extra for drizzling

  • 6 garlic cloves, thinly sliced

  • 1 punnet of cherry tomatoes

  • 1 pack of our tomato & basil sugo 420ml

  • handful of basil leaves

  • 1tbs salt & pepper

  • 2 burrata (halved one on each serve)

  • Parmesan, to serve.

  • 1 cup pasta water


METHOD:

  • Bring a pot of water salted to the boil, once water is rapidly boiling add your pasta – if you are using our fresh pasta this will take around 2-4 minutes. Once pasta is cooked reserve 1 cup of pasta water before draining and setting aside.

  • In a pan on medium heat add your olive oil. Once hot add the garlic and fry on low heat till fragrant – it will take about 1–2 minutes – then add the tomatoes and stir together for another 1-2 minutes.

  • Add your Tomato and basil sugo pouch and keep on a low heat and simmer for 10mins – once tomatoes are soft squish them with your fork

  • Add your salt, pepper some most of your basil. I like to add half my pasta water in this step to keep it nice and saucy and combine all together.

  • Add your cooked Spaghetti to your sauce and if you sauce it looking a bit dry or too thick add the rest of your pasta water and stir thoroughly to combine adding the rest of your basil leaves. Serve immediately, topping each plate with half a burrata, sprinkle some parmesan & cracked pepper and drizzle with some olive oil
